Coconuts and every other part of the coconut tree is a true gift for Keralites. Coconuts are squeezed for their fresh milk, grated, sliced or the juice and flesh of the tender coconut is also eaten. The fresh grated coconut is also slow roasted with masalas and stored away to make coconut based curries for veggies, fish and meat.
The essence of the coconut or its oil, today termed as one of the healthiest of oils for cooking is extracted from sun dried coconuts.
Chef Suresh Pillai’s cuisine has put coconut to good use in all its forms. His new restaurant brand “United Coconut” is in tribute to the Coconut Tree, its bounty and the co-inhabitants of God’s Own Country – The Malayalees.
