The evolution of Fish NIRVANA as the speciality signature dish of Chef Pillai organically starts with the lake fishes he was familiar since his native home is on the banks of the Ashtamudi lake. The Karimeen or Pearl Spot, is the most delicate as well as delicious of all Kerala fishes. The Karimeen was the best choice for the traditional ‘Karimeen Polichathu’ dish, where the fish is smothered in Kerala masalas and cooked, wrapped up in a banana leaf. This traditional cooking practice led Chef Pillai to create the Fish Nirvana Dish, where he pan fries the Karimeen lightly first before adding in coconut milk and spices and cooks in an open banana leaf over the fire. The final result is the unique Karimeen Fish Nirvana.
