Many moons ago, when people in Sri Lanka asked
“Where can I get a Kothu Roti?”
The answer would be “ Keep walking till you hear the sound!”
Street side cafes and restaurants in the Island cities would use
up the rotis and parottas and chunks of meat from the various
curries.
All of these would be literally chopped up or “Kothified” on
the iron stove top using a ladle in each hand by the cook.
The rhythmic drumming sounds could be mistaken for frenzied dancing drumbeats.
Like ‘Dappankuttu Machaa!’, the tamilians used to say after
the Kothu Porotta reached Tamil Nadu.
The making of a Kothu Porotta or Roti always had a buzz
around it!
It still has. From the London subway to the street stalls
in Malaysia.
