Pazhampori Chaat – Northern street food with a Kerala twist.
A chaat selling vendor with his chaat kart is part of the street landscape of Northern India.
Chef Pillai brings you chaat with the flavour bombs of Kerala all blended into a platter.
In this take on the North Indian chaat, he uses sun-dried plantains (Ethakkas) endemic to Kerala.
These plantain slices are then deep fried in a curry batter and topped with swirls of honey-infused yoghurt. To this is added swirls of a dark, sweet sauce made from Kerala tamarind and dried dates.
The Kerala mixture is used to top off this classic chaat with a Kerala twist!
