This dish is as iconic as the town it comes from. Kollam, Chef Pillai’s hometown.
Even though Kollam is known as ‘Mutton Town’, because of the classic eateries serving porottas and mutton curry, this version of the fried chicken is named after Quilon, the older name of Kollam.
This dish evolved after chicken slowly emerged as the homely, likeable and more affordable meat in homes around town. But this version was available only in a few restaurants.
The chicken legs fried crispy and crumbly…the crumbs are tossed all over the top of the dish.
